Spinach and feta

Method
- Add flour, salt to bowl and mix
- Add water and mix until combined
- Knead on bench for 8 mins until smooth and not sticky
- Cover and rest for 30 mins
- Divide as needed and shape into balls
- Cover and rest for 30 mins
- Make your filling now:
- For spinach and feta:
- Thaw and drain spinach in bowl
- Crumble up feta and add to bowl
- Add salt and mix
- For mince and onion:
- In the morning, add all ingredients to bowl (except onion) and fridge it
- Cook onion first then meat
- Let it cool then add mozzarella if having
- Dust work surface well
- Roll each ball into ~20 cm wide circle, 1-2mm thick
- Add filling to middle in a square shape
- Fold 4 sides in like a parcel
- Press edges to seal (might need water)
- Heat up heavy pan on medium-high heat
- Add olive oil as needed and cook 3-5 mins each side
- Should be golden and crispy, it's normal to char a bit
- Keeps in fridge for a few days or freeze for 3 months

Did 8 squares (4 spinach/feta, 4 lamb). Don't bother with spinach filling. Don' do square folds again, the dough is too thick on one side. Next time, do either a circle or semi-circle, but remember it needs to fit in the pan. That should mean you only have to cook 2 or 4 and will have one layer of dough on each side.
