White sourdough loaf

Test loaf. Video here. Takes 2 days.

Ingredients

  • Bread Flour 450g
  • Water 150g
  • Milk 100g
  • Sugar 25g
  • Salt 10g
  • Butter 50g
  • Sourdough Starter 100g
I used water instead of milk so it was 250 gm water total.

Method

  1. Warm water to 35 C and add to bowl.
  2. Add starter and stir with fork.
  3. Add flour and salt and mix.
  4. On bench and knead for 8 mins.
  5. Shape into ball (no folds).
  6. Back in bowl and leave out overnight (you can oil it up?).
  7. Tip dough onto floured bench.
  8. Fold into middle (don't stretch it) and shape into ball.
  9. Try that roll and tighten technique to add tension.
  10. Rest 30 mins.
  11. Flip dough over and shape into loaf (whatever technique you want).
  12. Rest ~10 hours.
  13. Bake with steam 40 mins @ 200 C.
