Hot cross bun

Follow Jack recipe. If you want them softer, use tangzhong (see notes below). 🔒

Method

  • If you do half fruit and half choc, the fruit half will weigh more.
  • As long as each ball is 90-110 gm they will cook fine.
  • Do a 2 rest each time.
  • Use parchment paper on a small tray (not the small black one).
  • For last rest, flour tops and cover with couche.
  • Last 20 mins heat oven
  • Last 10 mins do cross mix in small bowl and apply.
  • Kick off kettle.
  • Bake 25 mins @ 180 C with steam.
  • Take out of oven, put on rack and put parchment paper underneath.
  • Put 3 tsp marmalade into a cup and mix. Brush onto buns.

Notes

I used tangzhong (20 gm flour, 130 gm water) in March 2024 and they were very soft. Use same bake time.
