Focaccia

Makes 1 focaccia, On a hot day this takes ~4 hours. 🔒

For more flavour, do steps 1-4 then leave out overnight, (fridge if really hot). Start early if doing same day.

Dough

Ingredients

  • 320 gm water.
  • 3 gm yeast (3/4 tsp).
  • 400gm flour.
  • 10 gm salt.

Method

Still don't know if steps 2, 6 are needed.
  1. Add 35 C water to bowl.
  2. Add yeast and dissolve.
  3. Add flour and salt and mix.
  4. Cover and rest until doubled.
  5. Do some stretch-n-fold like pizza.
  6. Cover and rest until doubled.
  7. Line a pan (big tray=thinner / small tray=thicker, but not thin black one). Yes you need paper otherwise it sticks.
  8. Oil hands and dough. Scrape down sides and give it some slap-n-fold.
  9. Shape into ball and try cover it with oil, put on tray, but don't stretch yet.
  10. Cover with big round tin and rest until doubled.
  11. With 20 mins to go, heat oven to max.
  12. Oil hands and dough, stretch and dimple as you like.
  13. Add toppings if using, sprinkle salt on top.
  14. Bake with steam 15 mins @ 250 C.
