Tangzhong Makes 9 buns. Takes 2 days. 25 gm flour 120 water Dough 200 gm milk 7 gm yeast 30 gm milk powder 7 gm salt 1 egg 360 gm flour 45 gm unsalted butter Method Day 1 Make tangzhong. Day 2 Room temp butter. Warm milk to 35 C and to bowl. Add egg and yeast, stir with fork to dissolve. Add flour, salt, and milk powder and mix well. On bench, knead until combined. Add butter and knead until combined. Add tangzhong and knead until combined. By the end it's very sticky. Wet hands and shape into ball, back in bowl until doubled. Line 1 big tray. Cut into 8 pcs (~100 gm each), flatten then shape into ball and put on tray. then flatten again to make them wider. Stagger them like this: ⬤    ⬤    ⬤     ⬤    ⬤ ⬤    ⬤    ⬤ Flour tops to avoid sticking. Cover with couche, wait until doubled. If adding seeds, spray with water first so they stick. Get ABV: Coopers math  ABV = (OG - FG) / 7.46 + 0.5 or calculator here . It's 1 scoop Oxyclean to 3 ltr water. It's 1.5 ml StarSan to 1 ltr water. When taking gravity reading: Pour 30 ml and discard it, then fill to top. Take from bottom of the curve (meniscus). When using tap, loosen lid to avoid suck back. In summer, put a wet towel around FV. Put in freezer for 30 mins if super hot. Pry off bottles: Sail & Anchor. The tap should look like this. The lever is on the short end:

Method Warm water to 35 C and add to bowl. Add starter and stir with fork. Add flour and salt and mix. On bench and knead for 8 mins. Shape into ball (no folds). Back in bowl and leave out overnight (you can oil it up?). Tip dough onto floured bench. Fold into middle (don't stretch it) and shape into ball. Try that roll and tighten technique to add tension. Rest 30 mins. Flip dough over and shape into loaf (whatever technique you want). Rest ~10 hours. Bake with steam 40 mins @ 200 C.
