Pita

Makes 6 pitas. Takes 1 day (do 2 for more flavour). Scales well. Recipe is solid.

Ingredients

  • 165 gm warm water.
  • 4 gm yeast.
  • 256 gm white flour.
  • 5 gm salt.
  • 14 gm oil.

Method

  1. Mix water and yeast.
  2. Add flour and salt.
  3. Mix a bit then add oil.
  4. Mix well, wait until doubled.
  5. Divide as needed (70 gm each).
  6. Rest 30 mins. After 15 mins crank oven to max.
  7. Rolling pin to a 6" circle, not too flat.
  8. Rest 15 mins. Oven now ready to go.
  9. Bake on stone for 2 mins. They should be fluffy, not crispy or brown.
  10. Just do 3-4 at a time on the square stone. If doing batches let oven heat up after opening door.
