Rye loaf - cinnamon nutmeg
Makes 1 loaf. Takes 2 days.
Adapted from Hollywood book pg 96. I wanted a smaller loaf so halved all ingredients.
Ingredients
- 170 gm water
- 7 gm yeast
- 175 gm rye flour
- 75 gm white flour
- 5 gm salt
- 40 gm malt extract (~2 Tbsp)
- 2 tsp cinnamon
- 2 tsp nutmeg
- 50 gm raisins
- 25 gm chopped walnuts
Method - Day 1
- Soak raisins in half water overnight
Method - Day 2
- Add water and yeast to bowl and mix
- Add dry ingredients to bowl (except walnuts & raisins) and mix in bowl for 5 mins
- Take off rings and knead on bench for 6 mins
- Put back in bowl, cover and rest for 2 hours
- Grease up the small loaf tin, use butter and flour
- Flour the bench so dough doesn't stick
- Flatten dough out and sprinkle walnuts & raisins
- Roll into sausage so it fits the tin, add flour if necessary
- Sprinkle seeds on bench, spray loaf and roll in seeds (optional)
- Cover with big silver bowl, rest for 1 hour
- Bake 30 mins @ 200c
