Cevapcici

Makes more than enough for 1 meal for the 3 of us. Takes 2 days.

Ingredients

  • 500gm pork
  • 350gm beef
  • 150gm lamb
  • 1 onion
  • 4 garlic cloves
  • 3/4 tsp bi carb soda (blue lid)
  • 1/2 tbsp Vegeta or substitute
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp plain paprika
  • 1/2 cup bread crumbs (2 slices)
  • 1 egg

Day 1

  1. Bread crumbs: bake on tray in oven for 30 mins @ 150c
  2. Finely chop onion and garlic in pull cord
  3. Grind dry rough stuff in pestle & mortar
  4. Take rings off and get mixing
  5. Divide up as needed
  6. Cover and fridge overnight or freeze

Day 2

  1. Get enough plates for the batch and oil them
  2. Shape tightly into cevapcici and put on plate
  3. When done, oil the top of the cevapcici then rotate each one to cover in oil
  4. If not using straight away put back in fridge
Cook on a low heat, use a spatula and keep turning so they don't burn

Did a triple batch and flavour was OK but it was very difficult to mix in bowl. BBQ was hard too. I wouldn't do it again, just do double. Also forgot to put on low heat so they charred a bit, disappointing. Used heaped tsp/tbsp for dry stuff, they still have a buttery taste, could try tweaks next time.

I doubled all ingredients and divided into 3 (857gm each) giving us 3 meals. Used heaped tsp/tbsp to see if its has more spice/flavour. This turned out really well, think I'm getting closer, very happy with it.

Followed recipe and it was very nice, could do with more seasoning. On the BBQ I kept them moving with spatula, just tossing them around to keep from burning, it worked well.
